a weekend of baking

SO! This Saturday morning I made Raspberry Cream Cheese Breakfast Buns! They are soooo very yummy! My only note is to try and swirl the raspberry jam farther down into the bun... it was really only at the top... What a great way to start a Saturday morning :o)

Next up – Sunday Night...
Oatmeal Coconut Cookies = mega yum as well

Now these baby's would have been a breeze to make I'm sure of it... but my butter wasn't as soft as I thought it was... It was sitting on the counter for a few hours and I tested it... thought it was 'room temperature' CLEARLY it was not and I had an issue with creaming cold butter and sugar with my little hand mixer... it got all stuck... EVEN at one point Chris yelled through my hissy fit
"It's okay sweetie you don't have to make them" - as I yell back "YES I DO"... it just took a little extra care and the butter and sugar eventually creamed :o)
I also realized making cookies... cooking dinner... and preparing an apple crisp at the same time in my kitchen... was not wise and I cannot multitask that much!
35 minutes in my chicken portabello mushroom thingers should have been finished... when the timer went off... ooo I cut into then and RAW CHICKEN the oven turn off! BAH.
Anyway! It all worked out - apple crisp turned out - dinner turned out - cookies complete!
I like the photo's when people stack the cookies... I had to try it!

more evening baking!

Well here is a picture of the Pecan Coconut Shortbread Squares I made Monday night! They tuned out pretty good. I do think I needed to keep the shortbread crust in the oven a bit longer... they were on the more crumbly side then I wanted... but were very yummy!
The recipe is from The Complete Magnolia Bakery Cookbook. My new cookbook that I love so much and have decided that I am going to bake every recipe in that book! I will try and blog about it but I am just no good at taking pictures during the baking process... if you noticed or know I can be a very messy baker... so my camera could become covered in butter quite quickly or I could even drop it in some egg whites without even knowing it... a bit on the clumsy side! Here are the Oatmeal Peanut Butter Chip Cookies that I made last night! They are quite yummy and I got to try out my new cookie cooling rack! I didn't mix the oatmeal enough because I had some left over crumbs... but it all worked out!
No baking for tonight I'm going to hit up a target toning class... but I have a few recipes I've pre-bought ingredients for that I know I want to bake! Until Next Time –

a birthday cake attempt

So it was a co-workers 23rd birthday last week and I volunteered to bake a cake! My good friend Sarah bought me this fabulous cook book The Complete Magnolia Bakery Cookbook, for Christmas and I wanted to try out some of there recipes right away! So I made the 2-layer White Cake and Vanilla Butter Cream! I Certainly had an adventure making it... I baked the cake on a Wednesday and then put it in the freezer until Thursday to carve it. Thursday night... late night after watching Avatar... I came home to carve a cake into a Chanel Purse and decorate as such... Many calls later to Sarah with my answered questions from her! THANK YOU! and a huge mess... I am a messy baker as you can see... also quite a bit of whining and stomping my feet because things were not working like I wanted them too... I ended up with a Chanel Purse Cake! Unfortunately I did not take a complete picture... I still did a little more detail to the funny looking clutch at the top... lol.


Anyway... this will be the last carved cake I make solo for awhile I think... The next cake I make will perhaps just be a layered cake with butter cream icing... It was a hit at work and it was really yummy! I had left over random pieces at home that I iced and Chris liked it too!
Tonight I am making another recipie from the book... a yummy shortbreak pecan square thing! Happy baking too all!

2010

Happy New Year! I even got 'rabbits' this month! Chris was too hungover after New Years so I won!... it is about time I get some luck for the month! Whoop!
I brought in the 1st of January with a Glee Marathon! I still have a few more episodes left to watch but man that was a great day!
I got some great baking things for Christmas gifts this year so I plan on making some banana muffins and banana mini loafs... I have a lot of banana's in my freezer that I should use!
Monday was my first day back to Yoga... and Today... I can feel the burn of the quads and my shoulders... blasted downward DOG, why must you hurt so much! BUT Looking forward to next week! Unfortunately my yoga partner has broke her wrist snowboarding and will not be doing Yoga for sometime... so I will be solo for awhile...
SO HAPPY NEW YEAR!
